3 cups uncooked spiral noodles
3 cloves garlic
1/2 red onion
bunch of organic spinach
onion salt (2 tbsp, divided)
2 carrots julienne-style or shaved with a peeler
2 tbsp dried tomato powder (you can also use 1 c tomato sauce)
in a pot, make your noodles as per normal instructions, adding in 1 tbsp onion salt.
After 5 minutes of boiling add in the carrot.
When noodles are done, drain all except 1 cup of the remaining water.
Stir in dried tomato powder, allowing the powder to combine well.
- note if using tomato sauce, drain completely and add in sauce -
While that is cooking, saute the crushed garlic in oil.
Add in diced onion.
When onion is transparent, add spinach, stirring well.
Sprinkle 1 tbsp onion salt and stir well
Turn off and keep covered.
Combine the two pots together.
