Hot Veggie Pasta Salad

With this move, it was important to keep some of "home" to help prevent homesickness and also the more deeper concern of culture shock. One of the easiest reminders of home is food! So I made an easy noodle soup and the kids enjoyed it, as did I!

Recipe:

3 cups uncooked spiral noodles
3 cloves garlic
1/2 red onion
bunch of organic spinach
onion salt (2 tbsp, divided)
2 carrots julienne-style or shaved with a peeler
2 tbsp dried tomato powder (you can also use 1 c tomato sauce)
oil

in a pot, make your noodles as per normal instructions, adding in 1 tbsp onion salt.
After 5 minutes of boiling add in the carrot.
When noodles are done, drain all except 1 cup of the remaining water.
Stir in dried tomato powder, allowing the powder to combine well.
- note if using tomato sauce, drain completely and add in sauce -

While that is cooking, saute the crushed garlic in oil.
Add in diced onion.
When onion is transparent, add spinach, stirring well.
Sprinkle 1 tbsp onion salt and stir well
Turn off and keep covered.

Combine the two pots together.
