Vegan chocolate is actually a lot easier to find if you aren't looking at storebrand. I came across the need for vegan chocolate since many of my daughter's friends are dairy-free. An alternative is carob, but I like the taste of pure chocolate much better!
1/2 cup apple sauce (verify it is real apple sauce, it should not contain high fructose corn syrup!)
1 1/4 cup margarine
1/4 cup molasses (if you're not vegan, you can use honey)
1 tsp vanilla extract
1/4 cup Unsweetened Coconut
1/4 cup ground flax
1/2 tsp Cinnamon
1 cup Natural Cane Sugar
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2.5 cups unbleached all-purpose flour
Preheat oven to 375
Cream margarine with applesauce and molasses. Slowly add vanilla. Add in dry ingredients slowly. Mix until combined
Place on a baking sheet or in tins and baking for 12 minutes.
